Ingredients (Serves – 2)
- Flattened Rice (Poha) – 2 Cups
- Onion – 1 Medium (Finely Chopped)
- Potato – 1 Small (Finely Chopped)
- Green Chilies – 2 (Finely Chopped)
- Mustard Seeds – 1 Teaspoon
- Cumin Seeds – 1/2 Teaspoon
- Curry Leaves – 8-10
- Turmeric Powder – 1/2 Teaspoon
- Salt – To Taste
- Sugar – 1/2 Teaspoon
- Lemon Juice – 1 Tablespoon
- Fresh Coriander Leaves – 2 Tablespoons (Chopped)
- Roasted Peanuts – 1/4 Cup
- Oil – 2 Tablespoons
Method
- Rinse The Flattened Rice Gently In Water And Drain Well. Set Aside For 5 Minutes To Soften.
- Heat Oil In A Pan And Add Mustard Seeds. Let Them Splutter.
- Add Cumin Seeds And Curry Leaves, Then Sauté For A Few Seconds.
- Add Chopped Onions And Green Chilies, And Cook Until The Onions Turn Translucent.
- Add The Chopped Potatoes And Cook Until They Turn Soft And Slightly Golden.
- Add Turmeric Powder And Mix Well.
- Add The Soaked Poha, Salt, And Sugar. Mix Gently So The Poha Does Not Break.
- Cover And Cook On Low Heat For 2-3 Minutes.
- Add Roasted Peanuts And Mix Well.
- Turn Off The Heat And Add Lemon Juice And Fresh Coriander Leaves. Mix Lightly And Serve Hot.
