Ingredients   (Serves – 2)

  • Flattened Rice (Poha) – 2 Cups
  • Onion – 1 Medium (Finely Chopped)
  • Potato – 1 Small (Finely Chopped)
  • Green Chilies – 2 (Finely Chopped)
  • Mustard Seeds – 1 Teaspoon
  • Cumin Seeds – 1/2 Teaspoon
  • Curry Leaves – 8-10
  • Turmeric Powder – 1/2 Teaspoon
  • Salt – To Taste
  • Sugar – 1/2 Teaspoon
  • Lemon Juice – 1 Tablespoon
  • Fresh Coriander Leaves – 2 Tablespoons (Chopped)
  • Roasted Peanuts – 1/4 Cup
  • Oil – 2 Tablespoons

Method

  • Rinse The Flattened Rice Gently In Water And Drain Well. Set Aside For 5 Minutes To Soften.
  • Heat Oil In A Pan And Add Mustard Seeds. Let Them Splutter.
  • Add Cumin Seeds And Curry Leaves, Then Sauté For A Few Seconds.
  • Add Chopped Onions And Green Chilies, And Cook Until The Onions Turn Translucent.
  • Add The Chopped Potatoes And Cook Until They Turn Soft And Slightly Golden.
  • Add Turmeric Powder And Mix Well.
  • Add The Soaked Poha, Salt, And Sugar. Mix Gently So The Poha Does Not Break.
  • Cover And Cook On Low Heat For 2-3 Minutes.
  • Add Roasted Peanuts And Mix Well.
  • Turn Off The Heat And Add Lemon Juice And Fresh Coriander Leaves. Mix Lightly And Serve Hot.
