Kaddu Ki Sabzi (Serves – 4)
Ingredients:
- Pumpkin (kaddu, peeled and cubed) – 300 grams
- Green chili (slit) – 1
- Ginger (grated) – 5 grams
- Cumin seeds/Fenugreek seeds – 5 grams
- Turmeric powder – 2 grams
- Red chili powder – 2 grams
- Coriander powder – 5 grams
- Salt – 5 grams
- Sugar – 5 grams
- Amchur (dry mango powder) – 3 grams
- Oil – 15 grams
- Water – 50 ml
- Fresh coriander leaves (chopped) – 10 grams
Method:
- Heat oil in a pan.
- Add cumin seeds/Fenugreek and let them crackle.
- Add grated ginger and green chili, sauté for a few seconds.
- Add turmeric powder, red chili powder, and coriander powder. Mix well.
- Add cubed pumpkin and salt, mix to coat the pieces with spices.
- Add a little water, cover, and cook on medium flame until the pumpkin turns soft.
- Add sugar or jaggery and amchur powder. Mix gently and cook uncovered for a few minutes until the sabzi thickens slightly.
- Garnish with chopped coriander leaves and serve hot.
