Kaddu Ki Sabzi (Serves – 4)                                                                                                    

 

Ingredients:                                                                                          

  • Pumpkin (kaddu, peeled and cubed) – 300 grams
  • Green chili (slit) – 1
  • Ginger (grated) – 5 grams
  • Cumin seeds/Fenugreek seeds – 5 grams
  • Turmeric powder – 2 grams
  • Red chili powder – 2 grams
  • Coriander powder – 5 grams
  • Salt – 5 grams
  • Sugar – 5 grams
  • Amchur (dry mango powder) – 3 grams
  • Oil – 15 grams
  • Water – 50 ml
  • Fresh coriander leaves (chopped) – 10 grams

 

Method:

  • Heat oil in a pan.
  • Add cumin seeds/Fenugreek and let them crackle.
  • Add grated ginger and green chili, sauté for a few seconds.
  • Add turmeric powder, red chili powder, and coriander powder. Mix well.
  • Add cubed pumpkin and salt, mix to coat the pieces with spices.
  • Add a little water, cover, and cook on medium flame until the pumpkin turns soft.
  • Add sugar or jaggery and amchur powder. Mix gently and cook uncovered for a few minutes until the sabzi thickens slightly.
  • Garnish with chopped coriander leaves and serve hot.
