Ingredients: (Serves: 4)
- Whole wheat flour: 2 cups
- Water: 3/4 cup (adjust as needed)
- Salt: 1/2 teaspoon (for dough)
- Oil or ghee: 2 tablespoons
- Potatoes, boiled and mashed: 3 medium
- Onion, finely chopped: 1 small
- Green chilies, finely chopped: 1-2
- Ginger, grated: 1 teaspoon
- Cumin seeds: 1 teaspoon
- Garam masala: 1/2 teaspoon
- Red chili powder: 1/2 teaspoon
- Salt: to taste (for filling)
- Fresh coriander leaves, chopped: 2 tablespoons
Instructions:
- In a large bowl, mix the flour and 1/2 teaspoon salt. Gradually add water and knead to form a soft dough. Cover and let it rest for 15 minutes.
- In another bowl, combine mashed potatoes, onion, green chilies, ginger, cumin seeds, garam masala, red chili powder, salt, and coriander leaves. Mix well.
- Divide the dough into equal-sized balls. Divide the potato mixture into the same number of portions.
- Roll one dough ball into a small circle. Place a portion of the potato mixture in the center. Bring the edges together and seal the filling inside. Flatten gently and roll carefully into a circle about 6-8 inches in diameter.
- Heat a skillet or tava over medium heat. Cook the paratha for 2-3 minutes on one side until light brown spots appear, then flip and cook the other side, applying a little oil or ghee. Repeat for the other side.
- Serve hot with yogurt, pickle, or butter.
