Medu Vada                                                                                                                                                                                                                  (Serves – 4)

 

Ingredients:                                                                         

  • Urad dal (split black gram) – 1 cup
  • Green chili – 1, finely chopped
  • Ginger – 1 tsp, grated
  • Black peppercorns – ½ tsp, crushed (optional)
  • Curry leaves – 5–6, chopped
  • Salt – to taste
  • Oil – for deep frying
  • Water – as needed

 

Method:

  • Wash and soak urad dal in water for 4–5 hours or overnight. Drain.
  • Grind the soaked dal into a smooth, thick batter using minimal water.
  • Add chopped green chili, ginger, crushed peppercorns, curry leaves, and salt. Mix well.
  • Heat oil in a deep pan for frying.
  • Wet your hands, take a small portion of the batter, shape into a donut or flat round with a hole in the center.
  • Carefully slide the vada into hot oil and fry on medium heat until golden brown and crisp on both sides.
  • Remove and drain on paper towels.
  • Serve hot with coconut chutney and sambar.
