Ingredients (Serves – 4)
- Dried Kokum – 1 Cup
- Warm Water – 2 Cups
- Chilled Water – 3 Cups
- Sugar – 6 Tablespoons
- Black Pepper Powder – 1/4 Teaspoon
- Cardamom Powder – 1/4 Teaspoon
- Ice Cubes – As Required
- Fresh Mint Leaves – For Garnish
Method
- Wash the dried kokum thoroughly and soak it in warm water for 30 minutes.
- Transfer the soaked kokum along with the soaking water to a blender and blend lightly.
- Strain the mixture through a sieve into a large jug, pressing well to extract all the flavor.
- Add sugar, black pepper powder, and cardamom powder to the kokum extract.
- Pour in the chilled water and stir well until the sugar dissolves completely.
- Taste and adjust sweetness if required.
- Pour the kokum sherbet into serving glasses filled with ice cubes.
- Garnish with fresh mint leaves and serve chilled.
