Kokum Sherbet

Ingredients   (Serves – 4)

  • Dried Kokum – 1 Cup
  • Warm Water – 2 Cups
  • Chilled Water – 3 Cups                                                   
  • Sugar – 6 Tablespoons
  • Black Pepper Powder – 1/4 Teaspoon
  • Cardamom Powder – 1/4 Teaspoon
  • Ice Cubes – As Required
  • Fresh Mint Leaves – For Garnish

 

Method

 

  • Wash the dried kokum thoroughly and soak it in warm water for 30 minutes.
  • Transfer the soaked kokum along with the soaking water to a blender and blend lightly.
  • Strain the mixture through a sieve into a large jug, pressing well to extract all the flavor.
  • Add sugar, black pepper powder, and cardamom powder to the kokum extract.
  • Pour in the chilled water and stir well until the sugar dissolves completely.
  • Taste and adjust sweetness if required.
  • Pour the kokum sherbet into serving glasses filled with ice cubes.
  • Garnish with fresh mint leaves and serve chilled.
